Gastronorm pans are used at every stage throughout the preparation and service of food. Standard gastronorm pan sizing is fractional and includes a depth value. Knowing the depth of you pans is crucial to understanding how many will fit in your racking setup, combi ovens or even in cold storage. As a hard metal, stainless steel ensures your pans cannot be marked by metal utensils, and so are able to stand up to the scratches and dents of everyday service.
The thickness of your gastronorm pans is displayed as gauge and 22 is the most common within the catering industry. A lower value indicates thicker steel, so your preference may depend on volume. Although it’s worth being aware that thinner metal may be lighter and cost less in general but may also be less effective when it come to heating contents.
